No this isn't quite a recipe but we have given up carrying a BBQ and have started using a smoker instead
really designed for smoking freshly caught fish using meths a s a fuel and saw dust as smoke but works brilliantly with almost anything that can be smoked and packs up into a nice oblong that goes under the bed
last night had smoked sardines but over the last week have done grille chorizo, chicken 1/2 and toulouse saucisson

you put meths or spirit alcohol into a small can like you would on a trangia
in europe we just by fondue fuel in uk meths
does two mackerel in about 10 minutes or 500g of sausage in about twenty

We looked at something similar just before we went away, just in case we caught something and decided to cook it on the beach. As it turned out, didn't have enough time to get it delivered. (and I didn't catch anything anyway).
Looked at Cameron smokers on www.hotsmoked.co.uk They do a similar one to yours BB, and also ones you can use on a bbq, or hob.

Martin Dorey was using a Cameron smoker for mackerel at the JustKampers open day.
Looked good, tasted even better!
I'll probably get one ready for next season - hoping for a dryer one!

we have been running between weather but have had our first real grey day in france just been to Biarritz for the afternoon and sun came out though drizzling again now
